Ingredients
- 2 ¼ LB – Flank Steak
- 1/3 Bunch – Asparagus

3 TB – Bacon Bleu Burger Blend
- 8 Slice – Bacon
- 1 Cup – Butter, softened
- ½ Cup – Bleu Cheese Crumbles
- ½ Cup – Panko Breadcrumbs
- 1 TB – Bacon Bleu Burger Blend
Bleu Cheese Crust
Directions
- Butterfly the flank steak. Make your cuts in the same direction as the grain.
- Once butterflied, cover with plastic wrap and pound out with a meat tenderizer to even out the thickness.
- Season the steak generously with Bacon Bleu Burger Blend.
- Trim the ends of the asparagus and then lay the spears down onto the steak, parallel to the grain.
- Roll up the flank.
- Wrap the stuffed flank in bacon. Do not overlap the bacon, but keep each piece close together.
- Truss the flank with a piece of butcher’s twine around each slice of bacon.
- Cut the pinwheels, making cuts in between each slice of bacon.
- Make the bleu cheese butter by combining the listed ingredients and mixing until well mixed.
- Form the butter into a loaf and wrap with plastic wrap. Set in the fridge for 30-45 minutes before use.
- Turn on your broiler to medium
- Heat a skillet over medium/high heat.
- Add 1 TB of olive oil to the pan.
- Place the pinwheels on the skillet and sear off for 3 minutes.
- Flip the steaks and sear 1 minute.
- Cut ½” thick slices of bleu cheese butter and place them on top of each pinwheel.
- Place the whole skillet into the broiler and cook until the blue cheese butter is lightly browned.
- Remove from the broiler and rest 5 minutes before serving.
