Bacon Bleu Flank Pinwheels

Ingredients

  • 1 Cup – Butter, softened
  • ½ Cup – Bleu Cheese Crumbles
  • ½ Cup – Panko Breadcrumbs
  • 1 TB – Bacon Bleu Burger Blend

Directions

  1. Butterfly the flank steak. Make your cuts in the same direction as the grain.
  2. Once butterflied, cover with plastic wrap and pound out with a meat tenderizer to even out the thickness.
  3. Season the steak generously with Bacon Bleu Burger Blend.
  4. Trim the ends of the asparagus and then lay the spears down onto the steak, parallel to the grain.
  5. Roll up the flank.
  6. Wrap the stuffed flank in bacon. Do not overlap the bacon, but keep each piece close together.
  7. Truss the flank with a piece of butcher’s twine around each slice of bacon.
  8. Cut the pinwheels, making cuts in between each slice of bacon.
  9. Make the bleu cheese butter by combining the listed ingredients and mixing until well mixed.
  10. Form the butter into a loaf and wrap with plastic wrap. Set in the fridge for 30-45 minutes before use.
  11. Turn on your broiler to medium
  12. Heat a skillet over medium/high heat.
  13. Add 1 TB of olive oil to the pan.
  14. Place the pinwheels on the skillet and sear off for 3 minutes.
  15. Flip the steaks and sear 1 minute.
  16. Cut ½” thick slices of bleu cheese butter and place them on top of each pinwheel.
  17. Place the whole skillet into the broiler and cook until the blue cheese butter is lightly browned.
  18. Remove from the broiler and rest 5 minutes before serving.
