Onion rings are always a great appetizer, but have you ever tried bacon wrapped onion rings? These will be a hit for everyone!

Ingredients
24 OZ – Bacon
2 – Onions (big ones)
3 T – Rodeo Rub
½ C – Mayo
2 T – Honky Tonk Sauce
Directions
Preheat grill or smoker to 275, set up for indirect heat.
Peel the onions and slice into ¾” thick slices.
Use the outer rings, as they will be easiest to wrap. Separate in twos. Using two onion rings together will help hold shape better while cooking.
Wrap the onions in bacon. Each onion ring will take at least 2 slices of bacon to wrap fully. Secure with toothpicks if necessary.
Season the onion ring with Rodeo Rub on all sides.
Place the onion rings on the smoker over indirect heat but directly on the grates.
Smoke the rings for 45 minutes and then flip.
Smoke an additional 40-50 minutes until your desired texture.
Mix together the mayo and Honky Tonk sauce for a spicy dipping sauce and enjoy!
