Stuff it up with last night's dinner! This Stuffed Sweet Potato is loaded up with the best combo of sweet and bacon-y. Yesterday's leftovers just got a flavorful makeover.
Ingredients

4 Large Sweet Potatoes

8 Pieces Bacon- Cooked

1 Lb Pulled Pork- (toss lifhgtly in favorite BBQ sauce)

1/2 Cup Sour Cream

1/4 Cup Green Onion- Chopped

2 T Bacon Bomb Jalapeño Hickory

2 T Oil
Directions
Pre-heat oven to 400 degrees.
Wash sweet potatoes and poke them with a fork to allow steam to escape. Rub potatoes with oil and then generously season with Bacon Bomb Seasoning
Place on a sheet tray and bake for 40-50 minutes or until tender.
Heat left over pulled pork in the microwave or on the stove top with a little bit of liquid.
Open the potatoes and stuff with pulled pork and chopped bacon. Add a dollop of sour cream to each potato and season them with more Bacon Bomb.
Finish with chopped green onion
