Smoked Baked Beans

These smoked baked beans are loaded with thick-cut bacon, ground beef, jalapenos, and maple syrup, then seasoned with Rodeo Rub Texas Brisket Rub and smoked low and slow for 2 hours. The perfect BBQ side dish.

Ingredients

  • 3 LB -- Bacon, thick cut
  • 1 LB -- Ground Beef
  • 1 -- Onion, diced
  • 2 -- Jalapeno, sliced
  • 8 Clove -- Garlic, thinly sliced
  • 4 TB -- Rodeo Rub
  • 2 Can -- Baked Beans
  • 1/2 Cup -- Maple Syrup

Directions

  1. Roughly chop the bacon and place in a large pot.
  2. Cook over medium heat to render the bacon.
  3. Once cooked, strain and set aside.
  4. Cook the ground beef in the same pan over medium heat.
  5. Break apart and cook fully. Strain off excess grease and set the cooked beef with the rendered bacon.
  6. Add the diced vegetables to the pan and saute over medium heat until they sweat.
  7. Add the beef and the bacon back to the pan with the vegetables.
  8. Add in the two cans of baked beans and maple syrup.
  9. Season with Rodeo Rub and stir to combine.
  10. Bring to a simmer over low heat, stirring occasionally.
  11. Preheat smoker to 225 degrees.
  12. Pour the beans into a foil pan and place in the smoker.
  13. Smoke for 2 hours.
  14. Serve hot and enjoy!
