Smoked Baked Beans
These smoked baked beans are loaded with thick-cut bacon, ground beef, jalapenos, and maple syrup, then seasoned with Rodeo Rub Texas Brisket Rub and smoked low and slow for 2 hours. The perfect BBQ side dish.
Ingredients
- 3 LB -- Bacon, thick cut
- 1 LB -- Ground Beef
- 1 -- Onion, diced
- 2 -- Jalapeno, sliced
- 8 Clove -- Garlic, thinly sliced
- 4 TB -- Rodeo Rub
- 2 Can -- Baked Beans
- 1/2 Cup -- Maple Syrup
Directions
- Roughly chop the bacon and place in a large pot.
- Cook over medium heat to render the bacon.
- Once cooked, strain and set aside.
- Cook the ground beef in the same pan over medium heat.
- Break apart and cook fully. Strain off excess grease and set the cooked beef with the rendered bacon.
- Add the diced vegetables to the pan and saute over medium heat until they sweat.
- Add the beef and the bacon back to the pan with the vegetables.
- Add in the two cans of baked beans and maple syrup.
- Season with Rodeo Rub and stir to combine.
- Bring to a simmer over low heat, stirring occasionally.
- Preheat smoker to 225 degrees.
- Pour the beans into a foil pan and place in the smoker.
- Smoke for 2 hours.
- Serve hot and enjoy!
