This recipe uses the PS Seasoning Onion & Garlic Brat Kit for homemade bratwurst, then layers in PS Seasoning Chop Shop Steak Seasoning to build savory flavor in both the mashed potatoes and the gravy.
The result is a balanced plate with browned sausage, smooth potatoes, and a glossy onion gravy that brings everything together. Serve it with your favorite vegetable for a complete dinner.

10 lb pork trim or pork butt
1 PS Seasoning Onion & Garlic Brat Kit

½ stick butter
½ cup heavy cream
1 tsp PS Seasoning Chop Shop Steak Seasoning
Directions
Prepare the bratwurst according to the package directions on the PS Seasoning Onion & Garlic Brat Kit. This recipe uses 4 to 5 sausage links
reserve the remaining bratwurst for another meal.
Preheat your oven to 350°F.
Peel the Idaho potatoes and cut them into 2- to 3-inch chunks. Place them in a large pot and cover with cold water. Add 1 tablespoon of salt and place over high heat.
Bring the potatoes to a boil, then reduce the heat slightly to maintain a steady boil. Cook until the potatoes are fork-tender.
While the potatoes cook, make the Guinness gravy. Thinly slice the onion and add it to a medium saucepan with 1 tablespoon olive oil.
Cook the onion over medium heat for 15 to 20 minutes, stirring occasionally, until softened and caramelized.
Add the flour and stir continuously for 2 minutes to cook out the raw flour taste.
Pour in the Guinness and beef stock, stirring well to combine. Bring to a simmer and cook for 8 to 10 minutes, or until the gravy thickens slightly.
Season the gravy with 1 teaspoon PS Seasoning Chop Shop. If the gravy tastes too bitter, add sugar 1/2 teaspoon at a time until the flavor is balanced.
Drain the cooked potatoes and mash until smooth. Add the butter, heavy cream, and 1 teaspoon PS Seasoning Chop Shop. Stir over low heat until the potatoes are hot, creamy, and fully combined.
Heat a medium oven-safe skillet over medium-high heat. Add a small drizzle of oil if needed, then place 4 to 5 bratwurst links in the pan.
Sear the bratwurst for 3 to 4 minutes per side, turning until evenly browned.
Transfer the skillet to the oven and cook until the bratwurst reaches an internal temperature of 160°F.
Remove the bratwurst from the oven and let it rest for a few minutes.
Spoon the Chop Shop mashed potatoes onto each plate. Add the bratwurst, then top with the Guinness gravy. Serve with a vegetable of your choice and enjoy.
