Ingredients
- 2 LB – Chicken Breasts

5 T – Buffalo Cajun Wing Rub
- 2 Loaf – French Bread
- ½ Head – Iceberg Lettuce
- 1 – Carrot
- 2 Stalk – Celery
- 4 oz – Blue Cheese

¾ C – Mayo
Directions
- Season the chicken generously and then cook off in the oven or on the grill. (Grill will give the best flavor)
- Cool the chicken completely.
- Roughly chop the chicken and iceberg lettuce.
- Peel and roughly chop the carrot along with the celery.
- Combine the chicken, lettuce, carrots and celery on a cutting board and begine to chop them all together.
- Once it is all about the size of a medium dice, add the blue cheese and mayo.
- Continue to chop until it is all a small dice.
- Slice the French bread and load it up with the chopped chicken salad.
- Season with more Buffalo Cajun Wing rub and enjoy!
