Ingredients
- 12 oz – Chorizo (raw)
- 12 – Eggs
- 12 – Corn Tortillas
- 1 – Avocado (not too ripe)
- 1 Cup – Flour

3 TB – Elote Loco
- 2 – Eggs
- 2 Cup – Panko Breadcrumbs
- ½ Cup – Sour Cream

¼ Cup – El Jefe Taco Sauce
- Cotija Cheese
- Chopped Cilantro
Directions
- Cut the avocado in ½ and remove the pit. Peel and then cut the avocado into 12 spears.
Set up the breading station: Flour and Elote Loco mix; 2 beaten eggs; Panko
- Dredge a spear of avocado in the seasoned flour. Knock of excess flour and then place into the eggs.
- Once well coated, place the spear into the panko and lightly press to fully coat.
- Repeat with the remaining avocado.
- Pre heat fryer to 350 degrees.
Fry the avocado spears until crispy and golden brown, about 4-5 minutes.
- Place on a paper towel lined plate to dry and cool.
- Cook off the chorizo.
- Fry the eggs to your liking.
Combine the sour cream and El Jefe sauce for an El Jefe Crème.
- Build the tacos with a dollop of the El Jefe crème on a tortilla followed by a fried egg, chorizo and a fried avocado spear.
- Finish with cotija and cilantro.
