Every pit has its quirks. Every piece of meat is different. A 14-pound brisket might be done in 14 hours or it might take 18. A rack of ribs might stall early or sail through without a pause. The only way to know where you actually are is to measure internal temperature and know what you're looking for.

Beef: What Temperature Makes the Difference
For large beef cuts (brisket, chuck roast, beef ribs), the USDA safe minimum of 145°F tells you nothing useful. The meat is safe to eat at 145°F, but it's nowhere near done. You're looking for 200 to 205°F, the temperature at which collagen converts to gelatin and the tough connective tissue finally breaks down into something tender and sliceable.
Temperature is a guide, not a gospel. A brisket at 203°F that still resists the probe needs more time. A brisket at 198°F where the probe slides in like it's going through warm butter is done. Learn to read both the thermometer and the feel.
Pork: The Pulled Pork Debate
Pork butt and pork shoulder are the forgiving workhorses of the smoker. The USDA changed its safe minimum for whole pork to 145°F in 2011, but for pulled pork, you're targeting 200 to 205°F. That extra 60 degrees of cook time is what renders the fat and converts the collagen into the gelatinous, pull-apart texture you're after.

Poultry: Why Dark Meat Gets a Different Number
Poultry must reach 165°F. That's the USDA safe minimum and it's the pull temp. But chicken thighs and legs are an exception worth knowing: pulling them at 175 to 185°F actually improves texture. Dark meat has more collagen and connective tissue. At 165°F it's safe but can be chewy. At 175 to 185°F the connective tissue breaks down and the texture becomes silky and tender.
Breast meat is the opposite: go past 165°F and it dries out fast. Pull breast at 160°F (carryover cooking will bring it the rest of the way), or separate the breast from the thighs mid-cook to avoid overcooking one while waiting on the other.
Wild Game: Venison and Beyond
Venison is lean, much leaner than beef, with almost no marbling to protect it from heat. Overcooked venison turns dry and chalky quickly. For whole muscle venison roasts on the smoker, target 130 to 135°F for medium-rare. It's safe at that temperature for whole muscle cuts (the USDA safe minimum for whole cuts is 145°F, with a 3-minute rest).
For ground venison products (snack sticks, summer sausage, venison burger), the rules are different. Any ground product must reach 160°F regardless of animal species. No exceptions.
Cured Meats and Sausage: Food Safety First
All ground and cured sausage products (snack sticks, bratwurst, fresh sausage, summer sausage) must reach 160°F internal temperature. This applies whether or not the product includes cure (sodium nitrite). Cure prevents pathogen growth during the slow smoke; 160°F is the final safety step.
For fermented and semi-dry sausages like summer sausage and salami, follow your specific recipe's temperature protocol. Most call for a final chamber temperature that brings internal temp to 152 to 155°F, combined with proper cure usage and time-temperature controls.
