The Works Smoked Meatloaf

Ingredients

  • 2 ½ LB – Ground Beef
  • 2 – Eggs
  • 2 Cup – Panko Breadcrumbs
  • ½ Cup – Ketchup
  • ½ - Onion, small dice
  • ¾ Cup – Pickles, small dice
  • 8 oz – Tilimook Shredded Cheddar Cheese (thick shred)
  • 5 TB – The Works Burger Blend

  • ¼ Cup – Spicy Mustard

  • 1 Cup – Mayo
  • 1 TB – Sriracha Sauce
  • 3 TB – Ketchup
  • 2 TB – Bier Hall Stone Ground Mustard
  • 1 TB – The Works Burger Seasoning

Directions

  1. Preheat smoker to 275 degrees.
  2. In a large bowl, combine the ground beef, eggs, panko breadcrumbs, ketchup, cheddar cheese, diced onion and pickle. Season with the Works Burger Blend.
  3. Mix by hand, folding the meat over to incorporate all the ingredients.
  4. Once well mixed and slightly tacky, form the meat into a loaf.
  5. Place on a wire rack and then onto the smoker.
  6. Smoke for 1.5-2 hours until the internal temperature reaches 155 degrees.
  7. Smear ¼ cup of ketchup and ¼ cup of spicy mustard on top of the meatloaf and use a basting brush to evenly spread on the meat loaf.
  8. Place back on the smoker for an additional 20 minutes to tack on the sauce.
  9. Make the special sauce by combining the listed ingredients and mixing well.
  10. Remove from the smoker and rest at room temperature for 15 minutes before slicing.
  11. Serve with a drizzle of special sauce.
