Introducing our Texas Twinkies: a savory Texan delight! Spicy jalapeños stuffed with smokey creamy cheese and brisket, wrapped snugly in bacon, these mouthwatering treats are a must-have for any BBQ spread.
Ingredients
- 8 OZ – Cream Cheese

2 TB – Notorious P.I.G.
- 12 OZ – Shredded Brisket
- 8 – Jalapenos
- 24 Slice – Bacon (not thick cut)
- 2 TB – Notorious P.I.G.

¾ Cup – Cherry Bomb BBQ Sauce
- 2 TB – Butter, melted
Directions
- Preheat smoker to 225 degrees.
- Place the cream cheese on a foil tray and score the top with a knife.
- Season the top of the cream cheese with Notorious P.I.G. and place it on the smoker.
- Smoke for 2 hours.
- Remove the cream cheese from the smoker and increase the temperature of the smoker to 275 degrees.
- Cut the top of the jalapenos off, only about ¼” down. Use a knife to scrape out the pith and seeds.
- Combine the shredded brisket and cream cheese together and mix until incorporated.
- Fill the jalapenos with the cream cheese mixture.
- Wrap each jalapeno with 3 pieces of bacon, sealing off the top of the jalapenos.
- Season again with Notorious P.I.G. and then place on the smoker.
- Smoke until the bacon starts to crisp, about 45-60 minutes.
- Combine the melted butter and Cherry Bomb BBQ sauce until smooth.
- Baste the Texas Twinkies with sauce and then continue to smoke for an additional 10 minutes.
- Remove from the smoker and rest for 10 minutes before serving.
