It's getting HOT in here! These Honky Tonk Hot Chicken Sausages are packed with a good level of heat, an endearing sweetness and hit of smoke! Made from boneless chicken thighs, these are a healthy, spicy twist on traditional sausages.
Ingredients

6 Lb Boneless Skinless Chicken Thighs

4.75 Oz Honky Tonk Hot Chicken Rub

2 T Kosher Salt

Natural Hog Casing
Directions
Chill grinder parts over night in the fridge or freezer (blade, plate, auger etc…)
Cut the chicken breasts into pieces that will fit easily into the grinder shoot. Place in the freezer for 20 minutes before grinding.
Soak and prepare the hog casings.
Grind the chicken once through the 1/8” grinder plate and into a mixing tub or large bowl.
Season the meat with the Honky Tonk rub and salt. Add up to 1/3 cup water while mixing until the meat becomes tacky.
Prepare the sausage stuffer and stuff the sausages.
Bag the sausages for up to 5 days of storage or freeze.
