Ingredients
4 T Oil
2 T Boneless, Skinless Chicken Breast, Sliced
1 Red Bell Pepper- Julienned
1 Yellow Bell Pepper- Julienned
1 Green Bell Pepper- Julienned
1 Onion- Julienned
2 Jalapeños- Seeded, Julienned
4 T Elote Loco Street Corn Blend
12 Tortillas
Directions
Heat 2 TB oil in a large cast iron pan over medium high heat.
Cook the chicken with ½ the Elote Loco seasoning until the chicken reaches 165 degrees. Set aside.
Return the pan to the heat with the remaining 2 TB oil. Cook the vegetables with 2 TB of Elote Loco until the vegetables are tender.
While cooking the vegetables, heat the tortillas individually over an open flame for a few seconds each time.
Combine the chicken and the vegetables. Serve and enjoy!
