Chili Sloppy Joes

Ingredients

  • 2 LB – Ground Beef
  • Salt and Pepper to taste
  • 1 – Onion, small dice
  • 1 – Red Bell Pepper, small dice
  • 1 – Jalapeno, small dice
  • 3 clove – Garlic, sliced thin
  • 1 Can – Fired Roasted Diced Tomatoes
  • ¼ Cup – Rodeo Rub
  • 1 Can – Kidney Beans, rinsed
  • Burger buns for serving
  • Shredded Cheese and Sour Cream to finish

Directions

  1. In a pot over medium/high heat, cook off your ground beef adding salt and pepper to taste. Once fully cooked, drain off in a strainer and set aside.
  2. Return the pot to the heat and add the diced onion and red pepper. Cook until well sweated.
  3. Add the can of fire roasted tomatoes, diced jalapenos and garlic. Cook for 5 minutes.
  4. Add the cooked beef back to the pot and season with Rodeo rub.
  5. Cook for 20 minutes over low heat.
  6. Add in the drained and strained kidney beans. Cook for an additional 10 minutes.
  7. Check your seasoning levels and adjust as needed.
  8. Toast off your buns and build your sandwiches.
  9. Finish off the sloppy joes with a pinch of shredded cheddar cheese and a small dollop of sour cream. Enjoy!
