Blackberry Bourbon Ribs

Ingredients

  1. Preheat smoker to 250 degrees.
  2. Remove the membrane from the underside of the ribs.
  3. Slather the ribs in the Bier Hall mustard for a binder, and then season generously with BBQ General SPG rub.
  4. Let the ribs rest at room temperature for 20 minutes to help the seasoning adhere to the meat.
  5. Place the ribs directly on the smoker, curve up for 3 hours.
  6. While the ribs are smoking, make the braising sauce by combining the blackberry preserves and bourbon in a saucepan and bringing to a boil. Remove from the heat.
  7. Cut the butter into tabs.
  8. Wrap the ribs up in heavy duty foil, curve down.
  9. Add in the butter tabs and pour the blackberry bourbon sauce into the foil, then wrap securely.
  10. Place back on the smoker for an additional 2 hours until the ribs are tender.
  11. Remove the ribs from the foil and rest.
  12. Pour the sauce remaining in the foil into a sauce pan and bring to a simmer, add fresh blackberries.
  13. Mix the cornstarch with cold water and gradually whisk it into the simmering liquid until a thick sauce is formed.
  14. Drizzle the sauce on the ribs and enjoy!
