Pork Belly Brussel Skewers

Directions

1. Preheat smoker to 250 degrees.
2. Cut the pork belly into 1 ½” cubes. Season the pork belly generously with Lumberjack.
3. Place the pork belly on a rack lined tray and then onto the smoker for 2 hours.
4. Trim the brussel sprouts as needed and add them to the tray along with the pork belly.
5. Pour in the chicken stock and cover the whole tray with foil.
6. Return to the smoker for 1 hour until both the brussels and pork belly are tender.
7. Using 6” skewers, skewer a piece of pork belly, followed by a brussel sprout and then one more piece of pork belly.
8. Baste all the skewers with maple syrup and then place the skewers directly on the smoker for 5-10 minutes.
9. Baste again and then allow the skewers to rest for 5 minutes before serving.
