White pepper is the ripened fruit seeds harvested from the flowering vine, Piper nigrum. This is the same vine that black and green peppercorns come from. The dark colored skin surrounding the seed is removed and the seeds are dried to produce white peppercorns. White peppercorns have a hotter bite than black peppercorns, but are less complex in overall flavor. Whole peppercorns are ground in a spice mill or can be crushed to use in cooking.
