White pepper is the ripened fruit seeds harvested from the flowering vine, Piper nigrum. This is the same vine that black and green peppercorns come from. The dark colored skin surrounding the seed is removed and the seeds are dried to produce white peppercorns. The whole peppercorns can then be ground down into a fine powder. Ground white pepper has a pungent bite, but a less complex flavor than black pepper.
