Sweet Potato Pecan Casserole

 Maple Topping Ingredients:

3 Tbsp. Maple Syrup
6 Tbsp. Flour
1 1/2 Tbsp. Melted Butter
3/4 Cup Pecans, Chopped
Casserole Ingredients
3.3 Lbs. Sweet Potato, Peeled and 1" Cubed
3 Tbsp. Brown Sugar
3 Tbsp. Maple Syrup
1/4 Cup Unsweetened Almond Milk
6 Tbsp. Olive Oil
6 Tbsp. Butter, Room Temperature
1 Tbsp. Sweet Pecan Seasoning


1) Maple Pecan Topping: Mix all ingredients and set aside

2) Preheat the oven to 350°F

3) In a large pot, boil the sweet potato for 20 minutes until soft - drain and mash.

4) Combine the rest of the ingredients with the sweet potatoes and mash until combined thoroughly.

5) Spoon sweet potato mix into the casserole dish and sprinkle with the Maple Pecan Topping. 

6) Bake for 30 minutes and allow to cool for 10 minutes.

Serve and enjoy!
