2) Sear on high heat in an oven safe pan on all sides until crust is formed.
3) Cook in 280° oven uncovered for 4 1/2 hours.
4) Cook until internal temperature is at 130° for medium rare.
5) Add sliced onion and garlic at the bottom of the roasting pan for added flavor.
