Honey Chipotle Cauliflower Ingredients: |

1 Head | Cauliflower |
1/2 Cup | Flour |
1/2 Cup | Water |
1 Tbsp | Vegetable Oil |
1/2 Cup | Honey Chipotle Sauce |
Avocado Lime Dressing Ingredients: | |
1 | Avocado |
3/4 Cup | Plain Greek Yogurt |
2 Tbsp | Lime Juice |
2 Tbsp | 2% Milk |
1 Tbsp | Honey |
1/8 Cup | Minced Cilantro |
1/8 Tsp | Cumin |
1/8 Tsp | Salt |
To Taste | Black Pepper |
Instructions:
1) Dressing: Combine all of the ingredients and blend until dressing is smooth. Set dressing aside and place in the refrigerator until ready to serve.
2) Preheat the oven to 450°F. Wash and dry cauliflower, followed by cutting it into small bite sized pieces.
3) In a medium sized bowl, mix together the flour, oil and water. Toss cauliflower in the bowl until completely coated. In a parchment-lined baking sheet, place the cauliflower and back for 20 minutes or until batter begins to turn golden brown.
4) Once cauliflower is done, keep it on the parchment-lined cookie sheet, coat with the Chipotle Honey Sauce and place it back into the oven and back for another 3 minutes. Serve immediately. Serving with the Avocado Lime Dressing is recommended.
