6 | Firm, but ripe peaches, halved and pitted |
2 tsp | Olive Oil, plus more for brushing grill |
4 oz. | Macarpone |
1/4 tsp. | Vanilla Extract |
Honey | |
Granola | |
To Taste | Cinnamon Toast Spice Blend |
Fresh Raspberries & Mint Leaves |
Instructions:
1) Preheat a grill to 375-40 degrees.
2) In a mixing bowl mix together the mascarpone with 1 tsp Cinnamon Toast and 1/4 tsp Vanilla Extract.
3) Brush the peach halves with olive oil and sprinkle Cinnamon Toast on and grill them flesh side down for approximately 3 minutes per side.
4) Remove from the grill and add a spoonful of the mascarpone mix, sprinkle with granola and honey, and finish with a fresh raspberry and mint leaves if desired.
