Couscous Salad

 Ingredients:

2 Cups Couscous - cooked according to packaging and chilled
1/2 Bundle of cooked asparagus, cut in small pieces
4 Small Tomatoes, cut in half
Small Chunk of Feta
3 T Olive Oil
1 T Apple Cider Vinegar
1 T Lemon Juice
1 T California Garlic Pepper Seasoning


Instructions:

1) Put chilled couscous, tomatoes, asparagus and crumbled feta in bowl

2) In another bowl mix olive oil, vinegar, lemon and seasoning - whisk until mixed

3) Add Vinaigrette to Couscous and toss

4) Add pinch of salt and pepper and fresh parsley

5) Serve and keep chilled
