|1 1/2 cups||Long Grain Rice, rinsed and drained|
|3 cups||Chicken Broth|
|1 (14.5oz.)||Can Black Beans, rinsed and drained|
|3 tbsp||Diced Green Chiles (from can)|
Garlic Cloves, minced
|2 tbsp||Olive Oil|
|2 tbsp||Lime Juice|
|1/2 cup||Cilantro, chopped|
|Salt & Pepper to taste|
|2 tsp||PS Seasoning Chipotle Lime|
1) Heat 2 tbsps olive oil in a large nonstick skillet over medium high heat. Add red onions and jalapeños, saute 3-5 minutes.
2) Add garlic and cumin and saute 30 more seconds. Add rice and saute for a few seconds. Add beans, green chiles, chipotle lime seasoning, and chicken broth and bring to a boil.
3) Reduce heat to low and simmer, covered for approximately 20 minutes.
4) Remove from heat and let sit, covered. Season with salt and pepper. Stir in lime juice and cilantro.
