Beet and Goat Cheese Salad


1 Red Beet
1 Yellow Beet
Shaved Almonds
Mixed Greens or Lettuce
1 Small Goat Cheese Log
Olive Oil
Egg Yolk
Seasoned Breading Mix
Veggie Shake Seasoning


1) Wrap whole beets in tinfoil and bake in the oven at 400 for 45 minutes until a knife slides into beet - similar to cooking a potato

2) Let beets cool for a few minutes, unwrap from foil and take paper towel and skin should slide off day from beet

3) Cut disks from goat cheese log, dredge in egg yolk and then coat in Seasoned Breading Mix

4) Sear evenly on both sides in olive oil or butter

5) Mix greens, beets and almonds in olive oil and Veggie Shake

3) Lay 2 pieces of bacon flat, overlapping at the middle about half way, so you have a "longer" piece of bacon

4) Take potato and layer them one over the other the whole length of bacon

5) Roll up starting at one end - final product should look like a rose

6) Put in a uncreased muffin tin

7) Bake at 375 for 45 minutes
