1.5 Cup | All Purpose Flour |
3 Cups | S'mores Oatmeal Mix |
1.5 Tsp | Cinnamon |
1/4 Tsp | Nutmeg |
1 Tsp | Baking Soda |
1 Dash | Salt |
2 Sticks (1 Cup) | Unsalted Butter, Softened but still cool |
1 Cup | Granulated Sugar |
3/4 Cup | Light Brown Sugar, Packed |
1 | Egg, Large |
1 Cup | Mashed Bananas (2 Bananas) |
1 Tsp | Vanilla Extract |
Instructions:
1) Space two oven racks evenly in the oven and preheat to 350°F. Line 2 cookie sheets with parchment paper.
2) In a medium bowl mix together: flour, S'mores Oatmeal Mix, cinnamon, nutmeg, baking soda and salt. Set aside.
3) In a separate bowl mix together: butter, granulated sugar, and brown sugar until fluffy. Add the egg, mashed bananas and vanilla extract; beat until combined. Add the flour and oatmeal mixture and mix on a low speed until combined but make sure not to over mix.
4) Making Tablespoon sized balls (I use a small ice cream scooper) prepare baking sheet spacing balls 2 inches apart. Bake for 14-16 minutes, rotating the pans from the top to bottom half way through. Once slightly golden, remove from oven and transfer to a wire rack to cool completely. Repeat with the additional cookie dough.
