Citrus Mango Habanero Glazed Shrimp Kabobs


36                                Large Shrimp, Fresh & Deveined (Do not use precooked shrimp).
1 Mango
1 Orange
1 Lime
1 Lemon
¾ Cup Honey
2 Tbsp Mango Habanero Seasoning
¼ Cup Water
¼ Cup Apple Cider Vinegar
1 tsp Salt
Wooden or Metal Skewers


For Glaze:

  1. Squeeze or juice the mango, Orange, lime and half of the lemon into a small sauce pan. (Reserve the other half of lemon).
  2. Add seasoning, water, apple cider vinegar to juice and heat on medium until liquid comes to a low boil. Add honey and stir until it dissolves then lower the heat slightly so the liquid comes to a simmer.
  3. With the remaining half of lemon, slice into 4 rings and place in the cooking liquid. Allow to simmer for 10 minutes.
  4. Remove sauce pan from heat and let stand 5 minutes. Remove lemon rings and discard. Strain the remaining liquid through a fine strainer over a small bowl to remove excess pulp and large flakes from seasoning.

For Skewers:

  1. Ensure shrimp has been cleaned and deveined, and place in a shallow container. You could also lay them out on a baking sheet with a lip.
  2. With a large spoon, drizzle about half the glaze over the shrimp to evenly coat. Refrigerate for a half hour to an hour.
  3. Preheat grill to a high heat (about 400°F).
  4. Weave 5 or 6 shrimp onto each skewer. Leave about 1 ½" on each end and a ½" of space between each shrimp. Brush another layer of the glaze on the shrimp before placing them on the grill.
  5. Line the skewers on the center of the grill being sure to leave enough space between each for flipping. Brush the tops once more with the glaze, cover and cook for about 4 minutes.
  6. Flip the skewers and brush the other side once more with glaze; cover and cook an additional 4 minutes.
  7. Once shrimp have been grilled on both sides; remove immediately. Place on a serving tray and brush once more with glaze, if desired. You may also reserved the leftover glaze as a dipping sauce. Serve immediately.

Note: Be cautious not to overcook shrimp! Shrimp do not require a long cooking time so watch them closely. If they are cooked too long, they may become a tough, rubbery texture (this is why we strongly recommend using shrimp that has not been precooked). Shrimp are cooked properly when the outer membrane is a bright pinkish-orange color and the meat is a translucent white.


Tip: For additional sweet and tangy flavor, dice fresh pineapple and weave onto the skewers with the shrimp.
