|1 Cup||Grilled Chicken, diced|
|1/4 Cup||Red Bell Pepper, diced|
|1/4 Cup||Red Onion, diced|
|1/2 Cup||Sour Cream|
|1/2 Cup||Shredded Mexican Blend Cheese|
|1/2 T||Sweet Bourbon Chipotle Bacon|
|4||6" Flour Tortillas|
1) Start up your grill. Once it's fired up, preheat to 350 degrees F.
2) In a large bowl, mix together the sour cream, chicken, shredded cheese, diced pepper, diced red onion and Sweet Bourbon Chipotle Bacon until everything is well combined. Spread a thick layer of the chicken mixture onto two tortillas, then top with a second tortilla.
3) Grill for 2 minutes on each side, flipping halfway through, until the quesadillas are hot and the cheese is melted. Remove from the grill and serve.
