Gluten-Free Apple Pie Waffles With Apple Spice Syrup

Breakfast/Brunch Dessert Gluten-Free


You will need a waffle iron for this recipe.


For Apple Pie Waffles

1 cup PS Gluten-Free Buttermilk Pancake Mix
1 Egg, Large                                                         
2/3 Cup 2% Milk
2 Tbsp Vegetable Oil
1 Gala Apple, Very Finely Diced
1 tsp  Apple Pie Spice Blend
Vanilla Ice Cream (Optional)



For Apple Spice Syrup

1 Large                           Gala or Similar Type Apple - Peeled, Cored and Diced
1/2 Cup White Sugar
1 tsp Apple Pie Spice Blend
2 Tbsp Water


1) In a medium mixing bowl, combine Gluten-Free Pancake Mix, egg, milk, oil and Apple Pie Spice Blend; mix well. Fold in the finely diced apples; mix thoroughly and set aside.

2) In a small saucepan, begin cooking the Apple Spice Syrup by combining all the above ingredients on a medium heat until sugar dissolves and mixture comes to a boil. Reduce heat to low and cook for 10 minutes or until apples soften and syrup begins to thicken; remove from heat and let stand while you complete the waffles.

3) Heat waffle iron and be sure to spray with cooking spray. *Note: Cooking will depend on your specific waffle iron and desired doneness. Use the instructions for your waffle iron to cook waffles to your liking. Depending on the type and size of your waffle iron, this mixture should make 4 small sized waffles or 2 large waffles.

4) Once waffles are completed, pour the Apple Spice Syrup over the top and serve with vanilla or your favorite flavor of ice cream for a delightful brunch dessert.
