As the weather warms, it's natural to be drawn to al fresco dining and bright, refreshing drinks. Few foods lend themselves more easily to this treatment than tacos and margaritas. The handheld quality of a taco means they are perfect patio fare, and a sweet-and-sour tequila is just the thing to wash them down.
This cocktail is a sweeter take on the classic tequila, adding mango nectar for a bit of a fruity punch. To help balance the sweetness, we've kept the classic lime juice and added a bit of sparkling water to cut the thickness of the nectar. Finally, this margarita is topped with a smoky, chipotle-sugar rim to give it a bit of warmth and complexity.
|2 Ounces||Blanco Tequila|
|2 Ounces||Mango Nectar|
|1/2||Lime, Juiced (about 1 tablespoon)|
|1 Ounce||Club Soda or Sparkling Water|
|Chipotle-Sugared Rim Ingredients:|
|2 Tsp||Ground Chipotle Pepper|
1) To rim the glass, mix together sugar and Ground Chipotle Pepper on a small plate or a shallow bowl. Run the lime wedge around the lip of your preferred glassware, and then dip the glass into the chipotle-sugar mix to coat.
2) Fill the glass with ice. In a cocktail shaker filled with ice, combine the tequila, mango nectar, and lime juice. Shake 15 seconds and strain over ice. Top with club soda and garnish with the lime wedge from earlier, and enjoy the sunshine!
**If you like it hot and spicy, try infusing your tequila with habanero before making your cocktail. Add a sliced habanero pepper to an 8-ounce jar. Top with tequila, seal with the lid, and allow to sit in the refrigerator for at least 24 hours. Strain before using.**
