Chipotle Lime Cilantro Rice

Ingredients:
1 1/2 cups Long Grain Rice, rinsed and drained
3 cups Chicken Broth
1 (14.5oz.) Can Black Beans, rinsed and drained
3 tbsp Diced Green Chiles (from can)
1 tsp Cumin
3

Garlic Cloves, minced

1-2  Jalapeños, minced 
2 tbsp Olive Oil
1/2 cup
Red Onion
2 tbsp  Lime Juice
1/2 cup Cilantro, chopped
Salt & Pepper to taste
2 tsp PS Seasoning Chipotle Lime

Instructions:

1) Heat 2 tbsps olive oil in a large nonstick skillet over medium high heat. Add red onions and jalapeños, saute 3-5 minutes.

2) Add garlic and cumin and saute 30 more seconds. Add rice and saute for a few seconds. Add beans, green chiles, chipotle lime seasoning, and chicken broth and bring to a boil.

3) Reduce heat to low and simmer, covered for approximately 20 minutes.

4) Remove from heat and let sit, covered. Season with salt and pepper. Stir in lime juice and cilantro.
