Aromatic Spice Rubbed Pork Tenderloin

Main Course

Great for the holidays or an any day dinner favorite. This spiced tenderloin is wonderfully tender and fragrant. Let the smells fill your kitchen. Pairs well with a delicate white or rose wine such as Chardonnay or Pinot Grigio. If beer is more to your preference, try it with a stout or Irish Red.

1 1 Lb. Pork Tenderloin, Trimmed
1 tsp Sugar
1 tsp Garlic Powder
1 tsp PS Apple Pie Spice Blend
½ tsp Salt
½ tsp Ground Cumin
¼ tsp Ground Thyme
⅛ tsp Ground Red Cayenne Pepper
2 tsp Olive Oil

1). Preheat oven to 350°.

2). Combine all the dry seasonings in a bowl; rub over pork and let stand 20 minutes.

3). Heat oil in a medium ovenproof skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning on all sides.

4). Bake at 350° for 15 minutes or until a thermometer registers 155° (slightly pink), turning every 5 to 7 minutes. Turning the pork frequently in the pan ensures the spices don't burn and grow bitter.

5). Let stand 10 minutes; cut pork crosswise into 1/2-inch-thick slices.
