Cure accelerators like Sodium Erythorbate, and Ascorbic Acid are antioxidants or forms of Vitamin C. When used, they accelerate the nitrite (NO2-) conversion to nitric oxide (NO). This means sodium erythorbate speeds up converting nitrite to nitric oxide, so more nitric oxide will be available to react and create the cured meat color, in a shorter period of time. This is especially helpful for those using inclusions like high temp cheese in their smoked sausages, as the meat surrounding the cheese can oxidize, causing a brownish color (though not spoilt). The accelerator will help stabilize the colors and prevent any oxidation, ensuring an even color throughout.
Sodium Erythorbate is also helpful when using Encapsulated Citric Acid. If using ECA in your sausage, letting the meat rest overnight increases the chances of the encapsulate breaking. Using a cure accelerator help shorten the curing process, allowing the sausage to go directly into the smoker while mainting color and cured flavor.
After adding cure and stuffing your sausages, it's common practice to let them "bloom" for 8-12 hours to let the cure develop. In that time, the nitrites are converting to nitric oxide, which combines with the iron of the myoglobin to produce the signature reddish pink color of cured meats. There is no evidence to suggest that consuming a small amount of meat before smoking or processing your sausages without sodium erythorbate is dangerous.
No, using a cure in your meat block or adding encapsulated citric acid does not necessarily make your product shelf stable. However, using Meat Starter Cultures necessitates a fermentation period, which is not the case when employing Citric Acid.
Encapsulated Citric Acid: If you're making semi-dried sausages or snack sticks and desire that distinctive tang typically associated with reduced pH, Encapsulated Citric Acid is the solution. When used correctly, it's challenging to distinguish between sausages made using traditional fermentation or this product. There's no need to fret about special processing conditions. Simply add the citric acid to the meat mix at the end of the mixing process (without grinding the meat again) and blend it in by hand or using a mixer. Overmixing can rupture the capsules, causing premature citric acid release. This can also happen if citric acid is run through the grinder.
Encapsulated Citric Acid is natural citric acid encapsulated with maltodextrin and hydrogenated vegetable oil, which melts at 135 degrees Fahrenheit, releasing the citric acid into the meat product. This controlled release prevents premature pH reduction, which could negatively impact the texture of your sausage. If the pH drops before the protein sets at 105-115 degrees, the sausage won't bind well and may turn crumbly. Note that this product is not suitable for making dry products processed without heat; those require a starter culture.
For achieving that sought-after tang, it's recommended to use 3 oz. of Encapsulated Citric Acid for every 25 pounds of meat. Additionally, it can be employed to preserve the color of fresh sausages during storage, with 1/2 to 1 oz. per 100 pounds of meat sufficing for this purpose. Summer sausage is a type of cured meat first created in Europe prior to refrigeration technology. Using several types of preservation methods, these sausages could be enjoyed during the summer months without spoiling. That's why it is called summer sausage.
One of these was the use of cultures, allow the meat to ferment, lowering the pH and slowing the growth of bacteria. Similar to salami, Summer Sausage is semi-dry and doesn't lose as much moisture content during processing as its cured cousins.
Despite its name, summer sausage is commonly found in holiday spreads and festive gift baskets during the colder winter months.
The key to getting that perfect summer sausage texture is making sure you have the correct lean to fat ratios. We recommend a range of 20-25% fat and 75-80% lean for the finished product.
If your ratio is too lean, the texture could be dry and crumbling; too fatty, and you can risk bleed out during processing.
This is especially important when using lean game meats like venison or elk. To add fat, we recommend using pork trim or a fatty pork shoulder or butt roast. Pork trim, or the trimmings from the shoulder or butt, are typically available at your local butcher shop (make sure to call ahead!).
Summer sausage traditionally has nice visible separation between fat and lean meat. To get that texture, we recommend grinding first through a 3/8“ plate then once through a 3/16” plate. You don't want to force larger chunks of meat through the smaller grinder as it can damage your plates and cause smearing.
Pro tip: Remember to always keep your sausage meat cold! We recommend popping your meat block back into the cooler between grinds to prevent smearing.
Once each of your proteins has been ground, you can begin mixing by hand or by using a meat mixer. We recommend doing it by hand for batches less than 25 lbs as you don't want to break the encapsulated citric acid or high-temp cheese if you're adding them.

All of our summer sausage seasonings come complete with cure for up to 25 lbs. of meat. Nitrites help preserve the red in the meat in the absence of oxygen and also kill bacteria that can result in food-borne illnesses. Add the appropriate amount of cure for your meat batch to your water and stir to combine.
For that signature tangy flavor in summer sausage, you can either add a starter culture (traditional) or encapsulated citric acid. Using a starter culture converts sugars present in the meat into lactic acid, which develops along with the cure, lowering the pH of the meat and enhancing shelf life.
When using a culture, you'll have to add in a fermentation cycle to your processing schedule (about 2-4 hours at 85°F with water pan added for humidity).
Alternatively, ECA gives a mouthwatering tang to your finished sausage without a fermentation cycle. When using ECA, add it in to your meat block last and be careful not to overmix. The product should be smoked within 12-24 hours so you don't risk the enzymes breaking the encapsulate.

Summer sausage traditionally has a larger diameter (about 2-2.5") and is sold in a peelable fibrous casing. Fibrous casings are made from a cellulose material that derives from the Abaca tree, and provide durability, stretch, and perforation for smoke penetration. Casings should be soaked for at least 25-30 minutes in warm water before stuffing.
One of the trickiest parts of making summer sausage is the processing or smoking process. If the sausages heat too quickly, the fat has the potential to melt out and the encapsulated acid can break down. The key is to gradually increase the temperature to ensure there's no fat or additive loss inside the summer sausage.
If you're a regular sausage maker, we recommend investing in a high quality electric smokehouse, like the Pro Smoker PK-100, which uses sawdust as smoke fuel. Always refer to your manufacturers instructions for smoking times and temperatures, but as a general rule, our recommend processing schedule is:
Remove the sausage from the smokehouse and rinse with cool water. Rest at room temperature for one hour before placing in the refrigerator overnight.
As it is a perishable food item, summer sausage should be refrigerated to help slow down bacterial growth and preserve its freshness.
You may want to store it in an airtight container or wrapping it tightly in plastic wrap or aluminum foil to protect it from air exposure.
How long does summer sausage last? Unopened summer sausages (or uncut in the case of homemade summer sausages) can last for about 2 to 3 weeks when stored in the refrigerator.
Once your summer sausage is opened, it will typically remain good to consume for about 1 to 2 weeks if stored in the fridge in an airtight container or tightly wrapped foil.
If you are unsure, check for any signs of spoilage such as smells, mold, of texture differences.
Summer sausage is typically eaten as an appetizer or snack along with cheese, crackers, fruits, and nuts.
You can also pan roast summer sausage, incorporate it in classic recipes such as jambalaya, sausage rolls, and more.
Now that you've obtained the ultimate sausage making bragging rights, it's time to enjoy the fruits of your labor. Summer sausage should last about 3-4 weeks refrigerated and several months if sealed and frozen. The trickiest part of making jerky is having to buy all of the expensive equipment. For this homemade jerky, we're using just pre-ground beef, a rolling pin and parchment paper.
For jerky making, you want to use at least 90% lean ground beef because we don't want to much fat in the mixture as it will slow down the dehydrating process. You can also use lean ground turkey, chicken, venison or other lean ground proteins.
With our Honey BBQ Jerky kit you will just need a few at home tools to make your homemade jerky! Each kit includes three pre-measured seasoning packets with cure for up to 15 lbs of meat.
To start, mix the beef with our Honey BBQ jerky kit mix, everything you need is included in the kit.
When everything is fully mixed you will need to put the ground beef between two pieces of parchment paper and use a rolling pin to roll that out once mixed. Once flat, cut the meat into 1/4" strips and lay onto your metal drying racks. Score your meat with any straight edge and put in your oven. You're going to want to set the temperature of the oven to a lower setting around 170-180 degrees F with the oven door slightly open. Bake for 4-5 hours or until your homemade jerky can be broken apart! For the last step you are going to blot your jerky with paper towel and let cool!

In order to keep the yolk intact, you should gently flip the egg with a flat spatula and as close to the pan as possible. The higher you will flip the egg from, the higher the chance the yolk will break.
When you dip your fork into the center of an over-easy egg, the yolk should be runny, golden, and begging to be sopped up by your favorite toast. And that’s how to cook over easy eggs. Simple right?
Let’s be real, the classic sunny-side-up eggs are the most visually appealing eggs of the bunch. Sunny side-up eggs don’t need to be flipped—just crack them into a pan of butter or oil, let them sizzle for 2-3 minutes, and serve. The yolk should be round, bright, and oozing optimism.

Actively involved in several local & nationwide givebacks, PS Seasoning donates over 100,000 meals annually to fighting global hunger in partnership with The Outreach, a non-profit organization. After joining forces in 2017, PS has since donated & packaged 470,000 meals that are distributed to national food pantries. In the midst of the pandemic, Hanni donated 20,000 soup, pancake and oatmeal mixes to Feeding America in support of those impacted by COVID-19.
In addition to hunger relief efforts, Hanni is also well known in his community as an avid philanthropist. A former Fire Department volunteer, Hanni has provided life-saving equipment to first responders throughout the community. Other significant contributions were made towards education, including funds for a new community athletic complex and University of Wisconsin Meat Sciences expansion. In 2021, Hanni provided funds for a community park renovation, including a state-of-the-art playground and facility upgrades, donated in honor of Ken Hanni, his late father & co-founder of PS Seasoning.
The Leadership Award will be presented at the 2022 Specialty Food Association Summer Fancy Food Show in New York City.

Just two weeks after launching, Cheddar Apple Seasoning won Grand Champion at the Minnesota Association of Meat Processors cured meat competition. “We actually made a batch of Cheddar Apple sticks as samples, but the flavor was so unique and delicious, we knew we had to enter them,” says Tony Dehmer, Owner of Dehmer Meats in Minnesota. A blend of cinnamon, spices, apple pieces, and cheddar cheese, Dehmer mentions that they didn’t add the usual inclusions as the seasoning stood alone.
