Honey Chipotle Cauliflower with Avocado Lime Dressing

Finally, an appetizer that lets you feel guilty but not actually be guilty!  These cauliflower wings are healthier way to fight those not-so-good cravings!  And to top it off, try toning the spice with this vitamin-rich dressing.

Honey Chipotle Cauliflower Ingredients:

1 Head Cauliflower
1/2 Cup Flour
1/2 Cup Water
1 Tbsp Vegetable Oil
1/2 Cup Honey Chipotle Sauce
Avocado Lime Dressing Ingredients:
1 Avocado
3/4 Cup Plain Greek Yogurt
2 Tbsp Lime Juice
2 Tbsp 2% Milk
1 Tbsp Honey
1/8 Cup Minced Cilantro
1/8 Tsp Cumin
1/8 Tsp Salt
To Taste Black Pepper

 

Instructions:

1) Dressing: Combine all of the ingredients and blend until dressing is smooth.  Set dressing aside and place in the refrigerator until ready to serve.

2) Preheat the oven to 450°F.  Wash and dry cauliflower, followed by cutting it into small bite sized pieces.

3) In a medium sized bowl, mix together the flour, oil and water.  Toss cauliflower in the bowl until completely coated.  In a parchment-lined baking sheet, place the cauliflower and back for 20 minutes or until batter begins to turn golden brown.

4) Once cauliflower is done, keep it on the parchment-lined cookie sheet, coat with the Chipotle Honey Sauce and place it back into the oven and back for another 3 minutes. Serve immediately.  Serving with the Avocado Lime Dressing is recommended.

Honey Chipotle Cauliflower with Avocado Lime Dressing: 1 Head of Cauliflower, 1/2 Cup Flour, 1/2 Cup Water, 1 Tbsp Vegetable Oil, 1/2 Cup PS Seasoning Honey Chipotle Sauce, 1 Avocado, 3/4 Cup Plain Greek Yogurt, 2 Tbsp Fresh Squeezed Lime Juice, 2 Tbsp 2% Milk, 1 Tbsp Honey, 1/8 Cup Minced Cilantro, 1/8 Tbsp Cumin, 1/8 Tbsp Salt, Black Pepper to Taste
