Landjaeger (German for land hunter). Use this seasoning with beef or venison. A traditional snack sausage in Germany, Switzerland, and carried into the Midwest. This sausage is made using a natural hog casing 32-35, stuffed loosely, flattened and smoked. Package makes a 12 1/2 lb batch.
Ingredients: Dextrose, Salt, Spices, and Sodium Erythorbate (1.80%).
Use 1 Tbsp 3/4 tsp of seasoning and 1 3/8 tsp of Maple Cure for every 1 lb of meat.
